Recipe: Xmas Cookies! Cinnamon Stars with Lemon-Chocolate Glaze

When you make these cookies, your whole house smells of cinnamon – lovely!
I love making these cinnamon stars at night, and then wake up the next day to their scent. A perfect pre-Christmas Advent Sunday. Or Monday. Or Tuesday or .. 🙂

makes about 24 cookies
Ingredients:
300g raw hazelnuts, ground ( a good blender will do that for you)
3 dates, pitted
3 tsp cinnamon
1 tsp coriander, dried
1/2 tsp lemon zest
1/2 vanilla bean, scraped or 1 tsp vanilla extract *
1 pinch of sea salt
2 tablespoons coconut oil, liquid

Preparation:
Mix nuts, dates, cinnamon, coriander, lemon, vanilla and salt and process to a dough.
Add coconut oil, knead into a smooth dough.

Roll out 1 cm – 1/2 inch thick, cut out stars with a cookie cutter.
Allow to dry 4-6 hours at 42 degrees – in your dehydrator or on your radiator. 

Store in cookie jars for up to 2 weeks.

Optional: White Chocolate Lemon Glaze 

If desired, glaze with white chocolate glaze. You will need:
1/2 C raw cacao butter
1 tsp coconut oil
1 TBSP honey or agave syrup
1 TBSP lemon zest
Juice of half a lemon
1 pinch of sea salt

Melt cacao butter and coconut oil in a metal pot, in a water bath, your dehydrator or on your radiator.
Use a fork to stir in sweeteners, lemon zest , lemon juice and salt.

Glaze Cookies and place them in your freezer for a short while until the chocolate is solid again.
Store in cookie jars thereafter.

Drop remaining chocolate on a non-stick sheet – it will melt fastest like this when you use it next time – or fill it in chocolate or candy molds. Let set in the freezer, store refrigerated thereafter.

* Vanilla extract :

Extract is great if you either do not have whole vanilla beans available often or are paying attention to your budget. Due to the alcohol, the extract can be kept more or less for ever. Personally, I do not consider a tiny amount of alcohol in a recipe to be a big deal, especially if the recipe is dehydrated because the alcohol will then mostly evaporate anyways.

Scrape 2 vanilla beans, then cut them into 1 inch pieces.
Place everything in a small glass jar.
Cover with good-quality vodka and close the jar.
Store in a dark place, shake 1-2 x per day.
Tip: keep the glass in your bathroom next to your toothbrush. Like that, you don’t even have to think about it.
Your extract will be ready after one month.
It keeps “forever” and can be topped up again and again.
