Marzipan is one of my oldest loves – the soft sweetness of almonds just does it for me! This version though is vegan and without white sugar – even better!
100g almonds, ground
100g Agave or honey
1 TBSP lemon zest
3-4 TBSP pistachios, ground
1/2 tsp rose water
Mix all ingredients with a spoon and knead them until the combination has turned into a nice dough.
Wrap in glad wrap, store in the fridge.
For a quick sweet snack:
Pit a date, and fill the gap with marzipan instead. Done!
