Recipe: Easy vegan Guacamole

Guacamole makes pretty much any meal better, and yes by that I am including breakfast! Well, at least a savoury one… Enjoy!

Ingredients:

avocados, pitted and peeled

1 bunch of coriander, chopped

3 tomatoes, chopped into cubes

1 lemon, juiced

garlic cloves, chopped

8 cl olive oil

1 proper pinch of sea salt (or to taste)

Preparation:

Mix all ingredients in a big bowl, chill until serving.

Tastes also great as bruschetta spread, dip or mixed into a salad instead of a dressing.

Notes:

C = cup, 240 ml
1/2 C = half a cup, 120 ml or / TBSP
1/4 C = quarter of a cup, 60 ml or 4 TBSP
TBSP = table spoon, 15 ml or 3 tsp
tsp = tea spoon, 5 ml
“soft dates” = medjool are usually best. If necessary, soak briefly and drain. The soaking water is super sweet by the way!
