Superfood Sunday Recipe: Magical Nuggets of Euphoria

November tends to let us run out of power; it gets darker and greyer and colder with every day and you wonder how you are going to survive the rest of this upcoming winter. In this situation, these sweet bullets of magic are the best remedy ever!

This recipe is SO easy and quick to make and the synergetic effect of its ingredients will let you float in euphoric energy bliss 2 feet above the ground.
As opposed to many other raw vegan dessert treats, this recipe skips high glycemic dried fruits and does not have that overwhelmingly sweet taste.
If you wish to sweeten it up, add some chopped mulberries or goji berries to the  mix.

The key here is to stay balanced while still indulging

RECIPE FOR DELICIOUS NUGGETS OF EUPHORIA

makes 6 nuggets

Ingredients:

2 TBSP chia or flax seeds, ground (in a coffee mill or spice mill or in a high speed blender)
1/2 vanilla bean, scraped
1 tsp raw cacao powder
1 tsp maca powder
optional: 1 tsp camu camu powder OR lucuma powder
optional: 1 tsp ashwagandha powder OR mesquite powder
1 pinch of sea salt
3 tsp yacon syrup or honey
1 tsp coconut oil, liquid

Coating:

cacao, maca, mesquite, lucuma

Instructions:

Blend dry ingredients first. The chia seeds need to be ground.
Place in a bowl, add sweetener and coconut oil.
It will seem like you need to add more liquid, but just keep stirring for a few minutes until the liquid sweetener and coconut oil merge with the dry ingredients.
Roll into balls.
If you prefer a softer texture, add a bit of water.
If you prefer it denser, add a bit more ground chia.

Roll balls in cacao, maca, mesquite or lucuma.

Chill until serving.
