Recipe: Refreshing Pineapple-Tomato Salad

This salad is very delicious and goes perfectly with warm summer evenings.

for 2-3

Ingredients:

2 C lamb’s lettuce
4 tomatoes
1/2 small, fresh & ripe pineapple: golden yellow, firm flesh is ideal
1 small red onion
juice of one orange
1 TBSP white wine vinegar
1 TBSP honey or agave nectar or 2 dates ( soaked for 10 minutes if they are very hard )
4 TBSP olive oil
4 sprigs of coriander
sea ​​salt
fresh pepper

Preparation:

Wash and dry lettuce.
Divide between plates.
Slice tomatoes and pineapple as thinly as possible .
Arrange in a fan-shape or imbricate manner on salad.
Peel onion, slice into fine rings, spread on top.

Stir orange juice, vinegar, sweetener and oil together – blend if you are using dates. Otherwise you can also put all ingredients in a screw-top jar and shake it vigorously.
Finely chop cilantro, stir into vinaigrette. Season with salt and pepper, drizzle over salad. Serve.
