Recipe: Zesty Lemon Coconut Protein Balls

Have you ever gone to the gym only to afterwards treat yourself with some indulgence that was absolutely not good for you? It is a strange phenomenon how we see things as treats which are really only junk food – so why not choose real treats, that are delicious and also treat us well?

These Lemon Balls are one of the treats that I just love love love. Honestly these little bliss bombs are amazing! All natural ingredients, full of nutrients, and the taste is Oh! So! Good!

Plus it only takes minutes to make them from a few simple ingredients, and they keep for weeks, or rather, they are always gone before being anywhere near expiration.

The added raw vegan protein will give you an extra boost of energy to get you through a busy day while banishing sweet cravings – perfect as a morning or afternoon snack, before or after exercise.

RECIPE FOR RAW VEGAN LEMON PROTEIN BALLS

 

Ingredients for 16 balls:

5 Medjool dates, depitted

1/2 cup cashew nuts

1/2 cup coconut flakes

2 scoops raw vegan protein, vanilla

1/2 lemon, juice + zest or few drops essential oil

1/2 vanilla bean (seeds) or 1/2 tsp extract

1/4 tsp sea salt

How make raw vegan lemon protein balls:

Blend the cashew nuts and coconut flakes to powder.

Add the protein is using any, and keep blending while adding all the dates and the rest of the ingredients.

Shape balls and roll them in some coconut flakes.

Store in an airtight container for up to 2 weeks.

Notes:

The protein powder is optional. If you choose to use some, be aware that every brand is different, some will require a little more moisture from an extra date or a tiny bit of water.

Instead of lemon, you can also use edible lemon essential oil.

 

C = cup, 240 ml
1/2 C = half a cup, 120 ml or / TBSP
1/4 C = quarter of a cup, 60 ml or 4 TBSP
TBSP = table spoon, 15 ml or 3 tsp
tsp = tea spoon, 5 ml
“soft dates” = medjool are usually best. If necessary, soak briefly and drain. The soaking water is super sweet by the way!
